Instructions

  1. Drain the ollucos and slice them thinly.

  2. In a bowl, mix ollucos with carrot, tomato, onion and olives.

  3. Add coriander and green beans if using.

  4. Season with lemon or vinegar, salt and pepper.

  5. Toss and enjoy fresh!
