Recipe: Olluco Salad
Ingredients
1 can Inca’s Food Whole Ollucos (560g), drained & sliced
2 carrots, grated
2 tomatoes, diced
1 onion, thinly sliced
Inca’s Food Botija olives, sliced
Chopped coriander (culantro)
Cooked green beans (optional)
Lemon juice or vinegar (to taste)
Salt and pepper
Instructions
Drain the ollucos and slice them thinly.
In a bowl, mix ollucos with carrot, tomato, onion and olives.
Add coriander and green beans if using.
Season with lemon or vinegar, salt and pepper.
Toss and enjoy fresh!
