Meet Margarita, a dedicated coffee producer with over 15 years of experience. In 2007, she began cultivating coffee beans Caturra and Bourbon on her farm, El Mispero, situated at 1700 meters above sea level in Coipa village. Her meticulous approach involves harvesting only when the cherries are perfectly ripe, followed by careful hand-sorting to eliminate defects. After a 30-hour underwater fermentation, the cherries are pulped, parchment washed, and dried under controlled conditions until reaching the ideal moisture level. Roasted in New Zealand to perfection.
