Chilorio is a dish from the Mexican state of Sinaloa. It is made from pieces of pork (the original recipe) seasoned with pasilla chili, garlic, cumin and oregano.

It can be eaten in tacos with corn or wheat tortillas topped with guacamole or red sauce; enchiladas, tortas, or served with avocado salad.
